Beef tagine with vegetables

Ingredients:

  • 1 kg of beef
  • Olive oil
  • Salt
  • 3 cloves of garlic
  • 1/4 teaspoon hot paprika or paprika
  • 1 teaspoon ginger
  • Half a teaspoon of pepper
  • A little food coloring (optional)
  • 1 tomato
  • 1 onion
  • 2-3 potatoes
  • 3 carrots
  • 1 zucchini
  • Parsley and cilantro

More vegetables such as turnips or peas could be added.

Elaboration

In the pressure cooker, heat the olive oil and add the julienned onion. When it is slightly cooked, add the diced tomato. Then add the meat and all the spices except the salt. Cook over medium heat until the meat is browned on all sides. Add water to cover, finely chopped parsley and coriander, then add the salt and cover the pot. Cook for 40 minutes (counting from when the steam starts to come out).

After this time, turn off the heat, let the steam escape from the pot and open it. Add the vegetables cut into large pieces, adjust the salt if necessary, check if there is enough water and close the pot again, this time leaving it for about 10-15 minutes (depending on the size of the vegetables) counting from when the steam starts to escape.

After this time, we open the pot and it's ready. If necessary, we can let the sauce reduce a little. And enjoy!
